The testers liked "the work of art, which here becomes a plate of marinated vegetables: delicately decorated with delicate flowers, dried leaves and herbs, subtly flavoured with sour freshness and sweet notes of elderberry and delicate apple slices. Just as pretty are the scallops with Thai asparagus or the beautifully marbled rib eye of the 'old cow' in a broccoli frame". Blonkowski receives 15 out of 20 possible points for such dishes from Gault&Millau, which uses the French school grading system. They stand for a "high degree of creativity and quality" and thus for the class in which, according to the guide, cooking becomes an art form.
